The Coffee:

After trying one of Edinson's co fermented coffees I was blown away by how balanced the flavours were. Now it's that we can share with you this very special coffee that will push your tastebuds to a new level!

Edinson Argote is a driven & talented producer with wide industry experience and an extensive commitment to discovering new flavour experiences.

His true passion lay in starting his own farm and making his own innovations, which he has now been able to do at the Quebraditas farm. His farm is quickly becoming known for standout lots and we feel privileged to have been able to get our hands on some from the most recent harvest.

The best co-ferments for us work in harmony with the terroir and coffee cherry, rather than fighting and over powering them. After careful picking and sorting the coffee cherries are pulped and soaked to remove mucilage. Muscat grapes and a specialty selected yeast are added and left for 72 hours at temperatures below 25°C to control the fermentation. The coffee then goes into drying, which is carried out mechanically for 42 hours at 38°C. This is a crucial stage as the gentle, even drying will lock in flavours and being done in mechanical dryers means this delicate stage is not at the mercy of an unpredictable climate.

The result is a beautifully sweet, juicy coffee. On a hot day you need to try this as an iced pourover!
